Sotto la Vite was founded by Gina LoCascio. Her journey weaves together culinary artistry, service, and a genuine heart for people.
Gina served in the United States Air Force before earning her degree in Culinary Nutrition from Johnson & Wales University. The precision, discipline, and commitment to excellence she built in those years never left her. They followed her into every kitchen she trained in, every event she worked, and ultimately into the business she built. She brings that same standard of care to every single cup she serves.
At its heart, Sotto la Vite exists on a simple belief — that a great cup of coffee is never just about the coffee. It's about the moment it creates, the conversation it sparks, and the person on the other side of the cup who feels welcomed and taken care of. But what sets Sotto la Vite apart goes far beyond the espresso. Woven into the fabric of this business is a commitment to something bigger. The Mission Behind Every Cup
When you book Sotto La Vite, your event does something that reaches far beyond Colorado. A portion of every booking directly supports Patrick Cares Ministry. A faith-driven humanitarian mission in Uganda, founded in 2013 by Patrick, a man whose heart was forever changed by the children he saw suffering around him.
What began as one person sharing meals with vulnerable children has grown into a ministry dedicated to providing food, shelter, education, medical support, and spiritual guidance to orphaned and at risk children. Many of the children who came into Patrick's care arrived feeling rejected and broken. Through love, consistency, and faith, they've begun to smile again. Dreaming about their futures for the first time.
The long-term vision is clear and it's one Sotto la Vite is proud to be building toward alongside Patrick: a permanent orphanage and children's center in Uganda where children will not only survive, but truly thrive. Physically, emotionally, spiritually, and academically. Every cup poured. Every event served. Every booking made. It all moves this mission forward.
